Crab Coconut Soup Recipe

My husband and I are sick with strep. We’ve been at this for about a week.  This is the light at the end of the tunnel.  I can’t wait for dinner tonight.  If you are of Alabama, this soup is a lot like Surin’s Spicy Chicken Coconut Soup, but it’s with crab, and waaaaaay better.

1 tbsp peanut oil

2 tbsp Thai red curry paste

2 ½ cups coconut milk

2 ½ cups fish stock

2 tbsp Thai fish sauce

8 oz canned or fresh white crab meat [I used King crab meat.]

8 oz fresh or frozen crab claws [or more crab meat]

2 tbsp chopped fresh cilantro

3 scallions, sliced

Heat the oil. Add the curry paste and red bell pepper and stir-fry over medium heat for 1 minute.

Add the coconut milk, fish stock, and fish sauce and bring to a boil.

Add the crab meat, crab claws, cilantro, and scallions.

Stir the mixture well and heat thoroughly for 2-3 minutes or until all the ingredients are warmed through.

Transfer the soup to 4 warmed bowls and serve hot.


Japan, Hawaii and California

Thinking of Japan, Hawaii and the California coast today. I’ve been watching the news all day, and it hurts to not be able to check on my twitter friends. All of you are in my prayers today.


Away I Go

So far the TSA experience hasn’t been bad. They took all my toiletries because they were too big and confiscated my unopened water, but I’ll live.

I purchased a new water 10 feet from where mine was discarded and advanced on a Starbuck’s sign, but as I approached a “coming soon” sign revealed itself. Of all the places in all the world shouldn’t there be a Starbuck’s in every terminal? My flight leaves at 6:30. I sort of ASSUMED there’d be coffee at the airport. Birmingham International, you are fail. Memphis, the pressure is on.

Memphis was there for me with Starbuck’s, but the entire airport smelled like a breakfast burrito. This was both a diet frustration and a delicious party of smells, but mostly the frustration.

Neglect

I see that I’m neglecting the blog. BUT I HAVE A REALLY GOOD EXCUSE! I have been busy, and there have been a couple of hospital visits this year so far.

Yes, you read that right, A COUPLE so far THIS YEAR.

None of them were for me, but for the youngest and oldest members of the household, my youngest daughter and my father.

So tomorrow! I will post tomorrow about the hospital visits and line up something of a resolution check in. It’s this blog that’s been keeping me honest, and NO I HAVEN’T BEEN RUNNING.

Stop looking at me like that.

I did it all by myself!

Ok, ok, with a LITTLE help from ifixit.com but only with the disassembly and reassembly.

So what did I dooooooo, you ask? (No you didn’t ask. I know.)

I took our 150ish GB hard drive out and put in a MUCH BIGGER one (1TB). And THEEEEEEN I boosted us from 1GB of RAM to 2GB.

Typing it all out really doesn’t sound as impressive as I feel that I am with myself. Because if you haven’t guessed, I’m sort of super impressed with myself.


O Sushi

The other day Hubbs and I went to a little sushi restaurant that opened in Hoover near the new Super Target. So, you guessed it. It’s in a strip mall. Well it’s sort of a strip outside the stip. Whatever. Not my first choice to seek sushi. We went early and were the only ones there. We got the lunch special of Miso soup, Ginger salad, and two rolls. I had the California Roll and the Spicy Tuna Roll while hubbs had the Shrimp Tempura and the Spicy Asparagus.

The rolls were awesome. I tried both his and mine. Personally I could take or leave the soup and salad. Hubbs enjoyed the whole meal, but we could both agree. The rolls were awesome. I’ve been thinking about them all day. Lucky for me this place is just up the road, and if I play my cards right I’ll be it’s Foursquare mayor in due time.

They had something that really looked interesting. A Bento Box lunch special. Hubbs seemed to think that it was to go only, since the Bento Box part implies a to-go sort of lunch box. It’s the same as the lunch special but it includes fruit. Will be trying, and sending pics.

Lunch was 9.95 for each of us.

Resolution Progress

Well I’ve been without cheese now since January 1st and it hasn’t been too bad. Sometimes I start to think about the pizza I’ll be missing for the months to come or the queso dip I can’t have at the Mexican Restaurant. Then, just when I start to feel sorry for myself, I go and make it worse.

Happy February, and good-bye chocolate. Now cheese and chocolate are both gone. Sigh. This was like the dumbest idea ever.

Since all this lack of candy, Mexican, Italian etc will only (hopefully) lead to weight loss, why not make it official? I was catching up on my sort of e-boss’s blog (randomcommands.com) and was checking out all of the stuff that he accomplishing with diet, exercise and apps. Yeah, apps.

So I re-downloaded the (free) LoseIt! app (yeeees, re-downloaded, get off my back already) and set myself a goal. The app calculates your goal into a daily allotment of calories and that’s it! You find your foods, track them (and their calories) in a sort of food diary and then you weigh in to see how it’s progressing. The one magical thing is that you choose how much you want to lose and then…

This screen is total magic to me. It tells me in plain english that if I can commit and be good and follow the rules then I can ACHIEVE my goal by May 20, 2011. That is less that 3 months. YOU GUYS!!! This is the weight that I had looked and and decided to own. It was the weight that I had doomed would be with me until I died. Maybe your goals are different. Maybe I set a small goal for myself. Maybe I’ll never tell. But right here, I learned that the goal was achievable.

This will be book two against my goal of 100 for the year. I’m rereading this (out loud) with my seven year old daughter, who has seen the movie dozens of times, and also moved on to the second movie. She can’t move on to the third movie until she reads the first three books.
